### **Ingredients**

- 3 medium carrots

- 2 medium leeks

- 1 tablespoon of olive oil

- 500 ml of vegetable broth (no added salt)

- 200 ml of coconut milk (unsweetened)

- 1 pinch of salt

- White pepper (optional)

- 1 tablespoon chopped fresh coriander (optional)

### **Preparation**


#### 🍲 **1. Prepare the vegetables**

1. Wash, peel and cut the carrots into slices.

2. Wash and cut the leeks into rounds.

3. In a large saucepan, heat olive oil over medium heat. Add leeks and sauté **5 minutes** until tender.

4. Add the carrots and mix for 2 minutes.

1. Add the vegetable stock to the pan, cover and cook over low heat for **20 minutes**, until the vegetables are tender.
