### **Ingredients**


#### ✅ **For the soup**

- 2 zucchinis

- 2 leeks

- 1 tablespoon of olive oil

- 500 ml of vegetable broth (no added salt)

- 100 ml of light cream

- 1 pinch of salt

- White pepper (optional)

### **Preparation**


#### 🥒 **1. Prepare the vegetables**

1. Wash and cut the zucchini into slices.

2. Wash and cut the leeks into thin slices.

3. In a large saucepan, heat the olive oil over medium heat. Add the leeks and sauté for **5 minutes**, until tender.

4. Add the zucchini and brown for another **2 minutes**.


#### 🔥 **2. Cooking the soup**

1. Add the vegetable stock to the pot, then cover and simmer over low heat for **15 minutes**, until the vegetables are tender.

2. Blend the soup with an immersion blender until smooth and creamy.
