- 2 eggs

- 100 ml of milk (or almond milk)

- 30 g of wheat flour

- 20 g of butter

- 1 pinch of nutmeg

- 1 pinch of salt

- White pepper (optional)

### **Preparation**


#### 🧅 **1. Prepare the leeks**

1. Wash and cut the leeks into thin slices.

2. In a skillet, melt the butter over medium heat and add the leeks. Cook **5 minutes** until tender. Set aside.


#### 🍳 **2. Prepare the base of the soufflé**

1. In a small saucepan, heat the milk over low heat.

2. Add the flour and whisk constantly until the mixture thickens.

3. Remove from heat and add the fresh goat cheese in pieces. Mix until melted and the sauce becomes creamy.

4. Add the eggs one by one, whisking well, then add the nutmeg, salt and pepper.

1. Preheat the oven to **180°C**.

2. Butter two ramekins and pour the mixture into the ramekins.
